KOVAL MISSION

KOVAL Distillery prides itself on producing the highest quality whiskies, spirits, and liqueurs made from local, fresh, and organic ingredients. Whether discovered at a restaurant in Tokyo or a craft spirits store in New York, each KOVAL product is handcrafted from grain to bottle at home in Chicago. From milling the grains on-site to ensuring that each White American Oak barrel is filled purely with the heart cut—the cleanest, brightest cut—of the distillate, every step of KOVAL’s process is intentional.

What services do you provide to the public?

Besides providing some of America’s most unique whiskeys and spirits and offering cocktail classes, workshops, and tours, KOVAL also educates start-up distillers on the science and business of distilling. Through their consulting group, Kothe Distilling Technologies, Robert and Sonat Birnecker have assisted nearly 3,000 people and had a hand in nearly 100 distilleries that have opened in last 6 years.

How does your business get involved in your community?

KOVAL prides itself on supporting the community and giving back to charitable organizations. In 2015, for example, we participated in 290 charitable events and sponsorships in categories such as community service, schools, medical research, humanities, and more.

What makes your business stand out from the others?

When Robert and Sonat Birnecker founded KOVAL in 2008, they vowed to make organic spirits from scratch (avoiding the common industry practice of purchasing and bottling pre-made spirits) and to change the way people understand whiskey by creating a new, signature style - using only the “heart” cut of the distillate - affording a brighter, cleaner take on whiskey.

Is there anything you offer that no one else does?

We are the only distillery to produce a 100% Oat, as well as a 100% Millet whiskey. Similarly, our Bourbon is made with the requisite 51% corn, but instead of the more common addition of wheat or rye, KOVAL adds millet to the rest of the mashbill.

It is important that we share the same values and want to bring our creative energy to the marketplace while finding ways to express the values for which we stand.

Did you hear about FLATS before collaborating with them?

Yes. I had heard a great deal about Jay Michael, and we developed a friendship that not only involved FLATS but other ideas for collaborative projects too. He is greatly missed.

Why did you think FLATS was a good partnership?

We felt that our values were in line and we truly admired what FLATS was doing in Chicago and the way they were incorporating their values and vision into all of their work.
