Brian and Trent's Rooftop Garden

Brian and Trent were some of the first residents at The Lawrence House, and we love seeing Brian's posts on Instagram of their rooftop garden. As the summer comes to a close, we asked Brian to reflect on his favorite harvests. One of his favorite things to make is tea with fresh mint, here's his recipe.  

Brian's Mint Tea

      1 1/2 tbsp of dried mint leaves from the garden
 
      1/2 cup hot water
 
        Let tea steep for 2-3 min
 
          Strain out tea leaves
 

What's your favorite thing about having a rooftop garden?

Having our rooftop garden has taught me so much over time. It has allowed me to learn the practice of self sufficient living - learning to grow our own foods and be self sustainable. It’s an extremely rewarding process because we get to indulge in self grown delicious organic foods! It has also allowed our home to become an oasis of sorts - a place where we can detach ourselves from the outside world and escape, relax, and enjoy our own built sanctuary.

What have you grown this year?

We currently are growing rainbow chard, lemon balm, mint, chives, oregano, and thyme. Many of the herbs that are grown in the garden are then transplanted and brought inside at the end of the season. Last year we grew rosemary and sage in our garden and brought both inside to enjoy. We will do the same for our thyme and oregano this year so we can use multiple fresh herbs all year long!

How do you take your coffee?

Black coffee or almond milk macchiato, please!

Bike, walk, train, or drive?

I walk all the time. It’s also the best way to discover hidden little restaurants and shops - I love it! I’m not much of a driver and will usually either Uber places or take the bus or train.

Favorite Northside hangout?

Favorite Northside hangout would have to be Kalish Vegan on Wilson Ave. It's our weekend go-to restaurant!

What drives you?

My fiance Trent - he always pushes me to be the best that I can be and I'm forever grateful for him being in my life!

Why Chicago?

I wanted to move away from my roots in Omaha, NE and allow myself to grow more. I like to think Chicago allowed me to do just that and this amazing city just has so much to offer - it's truly home!

Can’t live without…

Plants. I just love plants so much!! You can call me a plant daddy for sure.

Do you have a four-legged roommate? Tell us about him/her.

I could seriously write a novel about the life of Charlie the English Bullterrier. Charlie is our four-legged handsome son. He truly redefined my life at such a crucial point and I'm forever grateful for him. We could not see our days without him always being there. He continues to inspire us and continues to brighten each and every day of our lives! We love him so much!

Cook us your favorite meal.

My favorite would be German Rouladen with potato dumplings and sauerkraut. YUM!

Take 1 1/2 tbsp of dried mint leaves from the garden and add 1/2 cup hot water.
Let tea steep for 2-3 mins, then strain out tea leaves. Enjoy!
